With Bacon and Sherry Vinagrette

Ingredients

Instructions

    1. Boil a large pot of salty water.
    2. Trim and half the brussel sprouts.
    3. Blanche the sprouts in the boiling water until tender (about 2 minutes)
    4. Drain and shock the sprouts in ice water then drain them again
    5. Make th vinaigrette by whisking the oil and vinegar together until thick.
    6. Cook the bacon over medium heat. When it begins to crisp, add the sprouts for about 1 minute.
    7. Add the shallots, garlic, and thyme. Toss and cook until the shallots are translucent.
    8. Pour the vinaigrette over to coat and season. Add salt and pepper to taste.
