With Bacon and Sherry Vinagrette

- Boil a large pot of salty water.
- Trim and half the brussel sprouts.
- Blanche the sprouts in the boiling water until tender (about 2 minutes)
- Drain and shock the sprouts in ice water then drain them again
- Make th vinaigrette by whisking the oil and vinegar together until thick.
- Cook the bacon over medium heat. When it begins to crisp, add the sprouts for about 1 minute.
- Add the shallots, garlic, and thyme. Toss and cook until the shallots are translucent.
- Pour the vinaigrette over to coat and season. Add salt and pepper to taste.
